Jaimon Thomas – A Visionary in Hospitality

Jaimon Thomas, the founder of Vantom Consultancy, is a visionary entrepreneur and restaurateur who has transformed the UK’s dining scene. With a deep-rooted passion for authentic cuisine and a sharp business acumen, he has successfully launched and managed multiple award-winning restaurants, each offering a unique culinary experience.

Building an Empire: The Story of Four Iconic Restaurants

Jaimon’s journey began in 2004 with Kayal, Leicester’s first South Indian seafood restaurant. Inspired by his mother’s encouragement, he introduced the UK to the rich, authentic flavors of Kerala. Kayal’s success led to the opening of three additional locations in Nottingham, Leamington Spa, and West Byfleet, Surrey.

His pursuit of innovation didn’t stop there. Recognizing the rising demand for plant-based cuisine, he launched Herb (2017), a pioneering vegetarian South Indian restaurant, defying skeptics and attracting diners from across the country.

In 2019, The Merchant of Venice Coffee Shop & Restaurant was born, fulfilling Jaimon’s long-standing dream of opening an Italian establishment. Shortly after, he founded The Donald Watson Vegan Bar, named after the British founder of veganism. This establishment, located next to Herb, serves small plates and craft beverages while spreading awareness about the origins of veganism.
